How to Make the No-bake Chocolate Cherry Cheesecake
Preparing the Crust
- You can use any chocolate cookie pie crust; this recipe uses Oreo cookie crust. To make this Vegan-friendly, use graham crackers.
- To make your crust, mix graham cracker crumbs or Oreo crust (crush your Oreo cookies into fine crumbs and combine with melted butter and sugar in a bowl. Press the mixture firmly into the bottom of a springform pan. Chill in the refrigerator for 30 minutes. Once set, remove from the springform pan.
Create the Cream Cheese Mixture for the cheesecake batter:
- In a large mixing bowl, beat together softened cream cheese and powdered sugar on medium speed until light and fluffy. Check for stiff peaks and a beautiful creamy texture. Set aside.
- Beat just until incorporated.
Combine:
- Add vanilla extract into that same large bowl. Gently fold the whipped cream into the cream cheese mixture. Add the mini chocolate chips and stir to combine a perfect combination.
