Ingredients
  

  • ● 1 tablespoon of Coconut Oil
  • ● 1 pound of lean ground beef
  • ● 1 medium-sized onion finely chopped
  • ● 1/2 red bell pepper finely diced
  • ● 1/2 green bell pepper finely diced
  • ● 3 cloves of garlic minced
  • ● 2 tablespoons of Taco Seasoning Store-Bought
  • ● 16 ounces of drained beans kidney or pinto
  • ● 1 cup of corn canned, fresh, or frozen
  • ● Approximately 1 1/2 cups of diced tomatoes from around 1 pound of fresh tomatoes*
  • ● 2 cups of beef broth

Instructions
 

  • In a large pan, add the coconut oil on medium heat.
  • Cook the ground beef until brown and remove any excess grease if needed once cooked.
  • Add the remaining ingredients. This includes taco seasoning, garlic, onion, bell peppers, broth, beans, corn, and tomatoes. Once it has reached a boil, lower the heat to the low setting and let it simmer for approximately 15 minutes.
  • Serve the soup hot, offering a variety of toppings according to your preference. Good options for this are Tortilla chips, sour cream, shredded cheese, green onions, avocado, hot sauce, or fresh cilantro.
