- ● 1 tablespoon of Coconut Oil
- ● 1 pound of lean ground beef
- ● 1 medium-sized onion finely chopped
- ● 1/2 red bell pepper finely diced
- ● 1/2 green bell pepper finely diced
- ● 3 cloves of garlic minced
- ● 2 tablespoons of Taco Seasoning Store-Bought
- ● 16 ounces of drained beans kidney or pinto
- ● 1 cup of corn canned, fresh, or frozen
- ● Approximately 1 1/2 cups of diced tomatoes from around 1 pound of fresh tomatoes*
- ● 2 cups of beef broth
In a large pan, add the coconut oil on medium heat.
Cook the ground beef until brown and remove any excess grease if needed once cooked.
Add the remaining ingredients. This includes taco seasoning, garlic, onion, bell peppers, broth, beans, corn, and tomatoes. Once it has reached a boil, lower the heat to the low setting and let it simmer for approximately 15 minutes.
Serve the soup hot, offering a variety of toppings according to your preference. Good options for this are Tortilla chips, sour cream, shredded cheese, green onions, avocado, hot sauce, or fresh cilantro.
