Preparation of Pork: Mix 1 1/2 tbsp of vegetable oil with the soy sauce in a bowl. Coat the pork ribs on all sides with the mixture and let marinate for 2 hours. Place the ribs and the remaining sauce in a ceramic baking dish.
Cooking Pork: Bake in the oven for 40 minutes at 375°F. Add a cup of hot water, cover the mold with foil, and cook for 1 hour at 300°F. The meat should separate easily from the bones, and the internal temperature should be about 145°F to 195°F (63 °C to 91 °C). Cool the ribs. Set the exposed bone aside. Pull the meat apart into fibers in a small bowl.
Preparing Filling: Dice the carrots and mince the garlic. Pour oil into a skillet and add vegetables. Cook until carrots are transparent. Add tomato sauce, green peas, chopped chilies and pork. Pour in 1/2 cup water and simmer until the liquid is evaporated. Lightly salt to taste.
Assembly: Roll out dough to 0.2-0.3-inch thickness. Cut out 2 circles using a 4-inch-diameter cup. Form the circle into an oval, as in the photo. Make incisions in the oval with a roller knife. Place the bone and stuffing on the round piece. Cover the filling with the cut-out piece. Secure the edges with a fork. Pay attention to the place where the bone is attached to the dough.
Baking: Line the air fryer basket with parchment paper and spray with olive oil. Using a silicone spatula, transfer the lollipops to the parchment. Brush with egg yolk. Cook in a preheated oven at 375°F for 15 minutes. Transfer to a serving plate and serve.
