Ingredients for Pork Pie lollipop air fryer recipe

Pork Ribs: I love making my meat pie lollipop using pork ribs because of its tenderness, infusing the pie with deep flavors and a succulent texture crucial for the filling.

Puff Pastry: Puff pastry cuts down on making the pastry from scratch and adds buttery crust, encasing the filling with a golden, crisp layer that’s visually appealing and delicious.

Green Peas: Green peas bring a sweet pop of freshness and color, offering a slight textural contrast and a hint of vegetal sweetness to balance the meatiness.

Carrot: Half a carrot contributes a subtle sweetness and crunch, enhancing the overall flavor profile and adding nutritional value to the dish.

Garlic Cloves: Garlic cloves infuse the pie with aromatic warmth and a pungent depth of flavor, elevating the savory notes of the meat.

Chili powder: A quarter chili introduces a gentle heat, adding complexity and a slight kick to the filling without overwhelming the other flavors.

Egg (yolk for oiling): The egg yolk is used for glazing the pastry, giving it a rich, golden shine that improves the texture and adds a delicate richness.

Vegetable Oil: Vegetable oil is essential for frying and browning the pork, ensuring it’s juicy and flavorful before it’s encased in pastry.

Tomato Sauce: Tomato sauce adds a tangy sweetness and moisture to the filling, helping to bind the ingredients together and enhancing the umami.

Soy Sauce: Soy sauce brings a salty depth and umami character to the pork, enriching the filling with its savory, complex flavors.

Instructions

Preparation of Pork: Mix 1 1/2 tbsp of vegetable oil with the soy sauce in a bowl. Coat the pork ribs on all sides with the mixture and let marinate for 2 hours. Place the ribs and the remaining sauce in a ceramic baking dish.

Cooking Pork: Bake in the oven for 40 minutes at 375°F. Add a cup of hot water, cover the mold with foil, and cook for 1 hour at 300°F. The meat should separate easily from the bones, and the internal temperature should be about 145°F to 195°F (63 °C to 91 °C). Cool the ribs. Set the exposed bone aside. Pull the meat apart into fibers in a small bowl.

Preparing Filling: Dice the carrots and mince the garlic. Pour oil into a skillet and add vegetables. Cook until carrots are transparent. Add tomato sauce, green peas, chopped chilies and pork. Pour in 1/2 cup water and simmer until the liquid is evaporated. Lightly salt to taste.

Assembly: Roll out dough to 0.2-0.3-inch thickness. Cut out 2 circles using a 4-inch-diameter cup. Form the circle into an oval, as in the photo. Make incisions in the oval with a roller knife. Place the bone and stuffing on the round piece. Cover the filling with the cut-out piece. Secure the edges with a fork. Pay attention to the place where the bone is attached to the dough.

Baking: Line the air fryer basket with parchment paper and spray with olive oil. Using a silicone spatula, transfer the lollipops to the parchment. Brush with egg yolk. Cook in a preheated oven at 375°F for 15 minutes. Transfer to a serving plate and serve.

Serving: Let the Pork Meat Pie Lollipops cool slightly before serving. Enjoy as a snack or with a side of your favorite dipping sauce.
