Ingredients
  

  • 1 lb skinless boneless salmon, cut into 1-inch pieces
  • 8 –10 zucchini slices
  • 8 –10 bell pepper pieces
  • 3 tbsp olive oil
  • 1/3 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp dried herbs

Instructions
 

  • Place the salmon pieces in a bowl and coat with olive oil, salt, paprika, and herbs.
  • Let it marinate while prepping the veggies.
  • In a separate bowl, toss zucchini and bell peppers with olive oil, salt, and herbs.
  • Thread salmon and vegetables onto skewers, alternating them.
  • Place in the air fryer basket in a single layer.
  • Cook at 360°F for 8 minutes, flipping halfway through.
  • Remove when salmon is cooked and edges are golden.
  • Serve warm with dipping sauce or a side salad.
