- 1 lb skinless boneless salmon, cut into 1-inch pieces
- 8 –10 zucchini slices
- 8 –10 bell pepper pieces
- 3 tbsp olive oil
- 1/3 tsp salt
- 1/2 tsp paprika
- 1/2 tsp dried herbs
Place the salmon pieces in a bowl and coat with olive oil, salt, paprika, and herbs.
Let it marinate while prepping the veggies.
In a separate bowl, toss zucchini and bell peppers with olive oil, salt, and herbs.
Thread salmon and vegetables onto skewers, alternating them.
Place in the air fryer basket in a single layer.
