Gluten Free Cheese Crackers

- 120 g gluten free flour I used Bob’s Red Mill
- ¼ tsp xanthan gum omit if your gf flour blend contains it
- ¼ tsp sea salt
- 225 g medium or old cheddar cheese finely grated
- 45 g cold butter in chunks
- 30 g cold water
Preheat oven to 350°F. Line a baking sheet with parchment.
In a bowl, mix flour, xanthan gum, and salt.
Add grated cheese and mix. Add butter and blend until crumbly.
Add water and form into a dough. Add more water if needed.
Divide dough, roll thin, and cut into 1-inch squares.
Place on tray, poke holes in center, and bake 12–17 mins.
Cool and store in an airtight container.
