  • 1 Pound Small Carrots Peeled and Trimmed
  • 2 Tablespoons Olive Oil
  • Salt and Pepper To Taste
  • Cooking Spray
  • 2 Tablespoons Honey

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with foil and coat with cooking spray.
  • Arrange carrots in a single layer on the baking sheet.

  • Roast for 20-25 minutes until tender.

  • Return to the oven for 10 more minutes.
