  • 1 kg Parsnips
  • 2 Tablespoons Olive Oil
  • ½ Bunch Fresh Thyme
  • 5-6 Bay Leaves
  • Sea Salt To taste
  • 1 Tablespoon Runny Honey

  • Preheat Your Oven: Heat the oven to 350°F (180°C or gas mark 4).
  • Prepare the Parsnips: Wash and trim the ends of the parsnips. Cut them into even pieces and place them in a large roasting tray.
  • Season and Add Herbs: Drizzle the parsnips with 1 tablespoon of olive oil and sprinkle with sea salt. Add the thyme sprigs and scatter the bay leaves among the parsnips.
  • Roast the Parsnips: Mix everything in the tray to coat the parsnips evenly with oil and seasoning. Place the tray in the oven and roast for 30 minutes, stirring halfway through for even cooking.
  • Add Honey: Drizzle the roasted parsnips with the runny honey and toss gently to coat. Return the tray to the oven for an additional 20 minutes.
  • Final Check: Check if the parsnips are golden brown and tender. If needed, roast for an extra 10-15 minutes.
