For the Cookies:
- ½ cup 1 stick unsalted butter, softened
- ¼ cup brown sugar light or dark for deeper flavor
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon instant espresso powder for a stronger coffee flavor
- ¼ cup heavy cream or milk
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
For the Extra Creamy Tiramisu Frosting:
- 6 oz mascarpone cheese softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 3 tablespoons heavy cream add 1 extra tablespoon for a silkier texture
- For Dusting:
- Cocoa powder
- Finely grated dark chocolate optional
Preheat oven to 350°F (175°C); line a baking sheet.
Cream butter, brown sugar, and granulated sugar until fluffy.
Mix in egg, vanilla extract, espresso powder, and heavy cream.
Combine flour, baking powder, and salt, then mix with wet ingredients.
Chill dough for 30 minutes (optional).
Scoop dough onto baking sheet; bake for 9-11 minutes.
Let cookies cool on a wire rack.
