- 3 tablespoons extra-virgin olive oil divided
- 3 teaspoons salt divided
- 2 pounds small red or yellow potatoes washed
- 2 tablespoons butter melted
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 1/3 cup grated Parmesan cheese
- Freshly chopped parsley for garnish optional
Preheat oven to 425°F. Brush a baking sheet with 2 tablespoons olive oil.
Boil potatoes in salted water until fork-tender (15-20 minutes). Drain and pat dry.
Place potatoes on the baking sheet and smash to ½-inch thickness.
Brush with remaining olive oil and bake for 15-20 minutes.
Flip the potatoes. Brush with melted butter, salt, garlic powder, and black pepper.
Sprinkle Parmesan cheese on top and bake for another 8-10 minutes.
Garnish with parsley and serve immediately.
