Ingredients
  

  • 2 cups medium eggs noodles
  • 3 cups rotisserie chicken
  • 8 cups chicken broth
  • 2 Tbsp butter
  • 1 cups baby carrots diced
  • 2-3 celery stalks diced
  • 1 cup frozen peas
  • ½ small yellow onion
  • 1 Tbsp minced garlic
  • ¼ tsp dried rosemary
  • ¼ tsp dried sage
  • 1 chicken bouillon cube
  • ½ tsp salt
  • ½ tsp pepper

Instructions
 

  • Bring a pot of water to boil. Add egg noodles and cook for 7 – 8 minutes.
  • Meanwhile, to another pot, add butter, carrots and celery. Saute on medium heat for 5 minutes. Add onions and continue to cook for 2 minutes. After vegetables have softened, add minced garlic. Cook for about 30 seconds.
  • Add chicken broth, chicken, peas, rosemary, sage, bouillon cube, salt and pepper.
  • Drain the noodles and add to the pot.
  • Allow soup to simmer for 5 – 10 minutes.
