Air Fryer Red Potatoes are the ultimate side dish with a perfect balance of crispy exterior and soft, fluffy interior. But making air fryer red potatoes is the new thing, and all shades of yummy in my house!

These air fryer red potatoes are also quick to make. I make mine by putting the diced potatoes in the microwave for 5 minutes before air frying to reduce the time, and the taste has not been affected.

My secret to the perfect crispy air fryer red potatoes is to cut them even about 1/2 to 1″. Also, don’t overcrowd the air fryer to allow for an even cooking.

I prefer making my red potatoes in the air fryer because they use less oil and fit into my diet.

Ingredients for air fryer red potatoes

  • 1.5 pounds of red potatoes, washed and quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

How to make the air fryer red potatoes

Step 1: Prepare the Potatoes

Cut the red potatoes into quarters, ensuring they are similar in size for even cooking. There is no need to peel the skin; this makes it super crispy and high in fiber.

Step 2: Season the Potatoes

Combine olive oil, garlic powder, paprika, salt, and pepper in a large bowl. Toss the potato quarters until they are well-coated.

Step 3: Place The Potatoes In The Microwave

Preheat your air fryer to 400°F (200°C) for 3 minutes. This helps with even and extra crispy red potatoes.

Step 4: Preheat The Air Fryer

Place the potatoes in the microwave for 5 minutes, reducing the cooking time. The time may vary depending on the amount of potatoes you have diced.

Step 5: Air Fry

Arrange the potatoes in a single layer in the air fryer basket, making sure not to overcrowd them. Cook for 10 minutes, shake the basket, and cook again for another 5 – 8 minutes to ensure even cooking.

Step 6: Garnish and Serve

Remove the potatoes from the air fryer and sprinkle with fresh parsley before serving. Opt for any other garnish of your choice. I have tried spring onions and love it with my air fryer red potatoes.

How do I store leftovers?

Place them in an airtight container and store them in the fridge for 3 days.
